Colombian- Huila Finca Monte Frio

We’re super excited to again offer a coffee from Huila – it’s been a few years. Among the samples we tried, this stood out for its complex mix of fruit, herb and savory flavors. Barista Chris’ first words were “Juicy Fruit gum.”

The producer of this fine coffee is Jose Herminzul Ninco Lara of  Finca Monte Frio located in the Hobo Municipality, Huila region.

We found roasting this coffee to be particularly tricky. It needs to be roasted dark enough to develop the sweetness and eliminate the grassy underdeveloped notes. It also must be light enough to retain the complex aromas.

Cupping notes of tangy acidity, ginger beer, tropical fruit, good body with a “chewy” mouthfeel.
